Oyster Bar
One of the only seafood restaurants in Las Vegas open round-the-clock, this hidden-gem oyster bar offers live-action dishes prepared before your eyes—including steamed clams, freshly shucked oysters, homemade chowders, and seafood pastas.

*The Oyster Bar is one of the few places in this city that I can confirm; the line is worth the wait.
*The entire restaurant has about 18 chairs with a countertop, and seating is first come, first serve, so the line can get long. The average wait is close to 1 hour, but I have waited up to 2.5 hours on a Saturday evening; it is part of the experience. Have someone in the party leave the line for one of the casino bars to buy rounds of drinks.
*Being open 24 hours a day, you could get lucky with a shorter line if you decide to dine at a non-traditional time.
*Everything is made to order, and the chefs are masters of what they do. You also get to watch them work from the counter while you wait.
*While they do have great oysters, the most notable item on the menu is their pan roasts. Think tomato bisque with your choice of spice level and meats, with a side of rice and sourdough roll.
*Everyone in your party must be 21+.
